These crisp and fluffy churro waffles are a fun twist on the classic breakfast recipe! Fresh warm waffles are brushed with butter and dusted with cinnamon and sugar.
Preheat your waffle maker to medium-high heat. Give it a light coat of non-stick spray or a brush of butter to keep your waffles from sticking.
In a large bowl, whisk together flour, 1/4 cup sugar, and baking powder.
In another bowl, beat the eggs until fluffy.
To the beaten eggs, add milk (whole or buttermilk), 1/2 cup melted butter, and vanilla extract. Mix these well.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Remember, a few lumps are okay – over mixing can lead to dense waffles.
Scoop enough batter onto the preheated waffle iron to cover the grids. Close the lid and cook until the waffles are golden brown and crisp. This usually takes about 4-5 minutes, but check according to your waffle iron instructions.
For the topping:
While the waffles cook, mix 1 tablespoon cinnamon and 1/2 cup sugar in a shallow dish. Melt 1/4 cup butter in another dish.
Once cooked, remove the waffle and brush both sides lightly with melted butter. Then, dip each side into the cinnamon-sugar mix, coating it well.
Serve these churro waffles warm. They’re fantastic as is, or you can up the ante with toppings like whipped cream, syrup, or fresh fruit.
Notes
This recipe does better with slightly crisp waffles. We cook ours a tad longer.This recipe is freezer friendly. Freeze the cooked waffles BEFORE adding the butter and sugar topping.When ready to serve, heat in the oven at 350 degrees for 5 to 10 minutes or until heated through. Brush with butter and dust with cinnamon and sugar.
