These crisp and fluffy churro waffles are a fun twist on the classic breakfast recipe! Fresh warm waffles are brushed with butter and dusted with cinnamon and sugar.

I LOVE CHURROS.
Seriously, they are a nostalgic treat that make me happy any time I get the chance to chow one down. My dad would always spoil me with the special cinnamon and sugar fried dough when we would go on errand runs together.
You see, we lived at least one hour away from any sort of big box store or larger town. That drive was torture to a small child, but my dad would fill the time with loud singing, the best dad jokes, and the promise of a treat if I was helpful and kind.
I always chose Costco churros. Because, well, they are the best when you are little and in need of a sugar fix. And, let’s be honest, the price is right.
I took my love for churros and combined that with my favorite waffle recipe. It is light, fluffy, and slightly crisp on the outside. Add melted butter, and a quick toss of cinnamon and sugar, and you have the most insanely decadent breakfast treat!
Cinnamon Sugar Waffle Recipe

Churro Waffle Ingredients:
All of the ingredients in this recipe are pantry staples. Which means you can whip these up in no time! Let’s break down what you will need.
- All-purpose flour- Basic white flour
- Granulated sugar
- Baking powder
- Eggs
- Milk
- Butter
- Vanilla
- Cinnamon
A few notes… Use room temperature ingredients. I take the eggs out of the refrigerator about 20 minutes before I am ready to get cooking and slightly heat my milk so it takes away some of the chill. This helps things come together more quickly without the need to mix the batter heavily.

How to make churro waffles from scratch:
For the waffles:
- Lightly whisk together the flour, 1/4 cup sugar, and baking powder in a large bowl.
- Combine the eggs, milk, 1/2 cup melted butter, and vanilla extract in a large measuring cup. Whisk to combine.
- Pour the wet ingredients into the dry. Whisk by hand until just combined.
- Preheat an electric waffle iron. Pour 2/3 cup of the batter into the iron and cook according to the manufactures directions.
NOTE: This recipe does better with slightly crisp waffles. We cook ours a tad longer.
For the topping:
- While your first waffle is cooking, combine 1/2 cup granulated sugar and 1 tablespoon cinnamon in a large plate or large shallow dish.
- Place the remaining 1/4 cup melted butter close by.
- As the waffles complete cooking, brush with butter and dust with the cinnamon and sugar mixture.
- Serve immediately.
What to serve with waffles:
These cupcakes are so incredibly delicious all on their own. Here are a few things we like to serve with our churro waffles:
- Warm syrup
- Whipped cream
- Fresh fruit
- Side of yogurt
Tips for this recipe:
- This recipe is freezer friendly. Make the waffles and freeze fully before you add the butter, cinnamon, and sugar. Heat in the toaster or oven for 5-10 minutes until heather through. Brush with butter and dust with cinnamon and sugar.
- Do not over mix your batter. I always recommend hand mixing your batter. A light mix allows the ingredients to incorporate while keeping air in the mixture keeping your waffles light and fluffy.
- Use room temperature ingredients. Having ingredients the same temperature helps everything to mix together quickly.
