Wash and dice the potatoes into ½-inch cubes for even cooking. Place them in a large bowl of ice water and let them soak for 30 minutes. This helps remove excess starch, making them crispier in the air fryer.
Set your air fryer to 400°F (200°C) and let it heat up while you prep the potatoes. Preheating ensures the potatoes start crisping up right away.
Drain the potatoes and pat them completely dry with a clean towel or paper towels. Moisture will prevent them from crisping, so don’t skip this step!
