Loaded Tater Tot Nachos (Totchos)

These Loaded Tater Tots are topped with cheesy taco meat and your favorite taco toppings for an easy dinner or appetizer. Crispy, flavorful, and ready in about 30 minutes.

Ingredients

  • 1 (32 oz) frozen tater tots or Crispy Crowns
  • 1 pound lean ground beef
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • Water as directed on taco seasoning packet
  • ½ cup salsa
  • 2 cups freshly shredded cheddar cheese or Mexican cheese blend

Toppings

  • 1/4 cup Sour cream
  • 1/2 cup Pico de gallo
  • 2 tablespoons Sliced green onions

Instructions

  • Preheat the oven according to the package directions for the tater tots.
  • Arrange the frozen tater tots in a single layer on a large baking sheet. Bake until they're deeply golden brown and extra crispy, adding a few extra minutes if needed.
  • While the tater tots bake, cook the ground beef in a large skillet over medium heat, breaking it into crumbles as it cooks. Drain any excess grease.
  • Stir in the taco seasoning and water according to the package directions. Simmer until the sauce has thickened.
  • Add the salsa and stir to combine.
  • Sprinkle the shredded cheese over the taco meat. Cover the skillet with a lid for 2 to 3 minutes, or until the cheese is completely melted. Gently stir until the meat is coated in a creamy, cheesy sauce.
  • Transfer the crispy tater tots to a serving platter or leave them on the baking sheet.
  • Spoon the cheesy taco meat evenly over the tater tots.
  • Top with sour cream, pico de gallo, and sliced green onions. Serve immediately while the tater tots are still crispy.

Notes

  • Crispy Crowns are my favorite because they hold the toppings better, but classic tater tots work just as well.
  • Bake the tots until they're extra crispy before adding the toppings.
  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • The taco meat can be prepared up to 3 days ahead and reheated before assembling.
  • Customize with jalapeños, avocado, black olives, cilantro, or your favorite taco toppings.
