I’ve made loaded tater tots a lot of different ways, and this version is the one my family requests most. It keeps everything you love about nachos, but swaps the chips for crispy tater tots that somehow make the whole meal even better.

  • Extra crispy tater tots: Bake the tots until they’re deeply golden brown. They need to be crisp enough to hold up under all of the toppings.
  • Cheesy taco meat: The secret is keeping the tater tots extra crispy while the beef stays cheesy and saucy. Instead of baking everything together, I melt the cheese right into the taco meat before spooning it over the top. It gives you all the flavor of loaded nachos without sacrificing that crispy potato base.
  • Big taco flavor: A little salsa mixed into the seasoned beef adds extra flavor and just enough moisture without making the tots soggy.
  • Fresh toppings: Sour cream, pico de gallo, and green onions balance the rich beef and cheese while adding freshness and texture.

Whether you call them loaded tater tots, totchos, or tater tot nachos, this method keeps every bite loaded with flavor while the tater tots stay crisp from the first bite to the last.

This recipe keeps things simple with a handful of easy-to-find ingredients. Here are a few notes before you get started:

  • Tater Tots: I actually prefer Crispy Crowns for this recipe because they have more surface area to hold the toppings. Regular frozen tater tots work just as well, so use whatever you have on hand.
  • Ground Beef: I use lean ground beef, but ground turkey or ground chicken also work well if you’re looking for a lighter option.
  • Taco Seasoning: Either homemade taco seasoning or your favorite packet works here. I use homemade when I have it, but a packet is a great shortcut on busy nights.
  • Salsa: Stirring a little salsa into the cooked taco meat keeps it flavorful and just saucy enough without making the tater tots soggy. Use mild, medium, or hot depending on your preference.
  • Cheese: Freshly shredded cheddar or a Mexican cheese blend melts the best. I like melting the cheese directly into the taco meat before adding it to the tots for the creamiest texture.

Easy Variations

Once you’ve mastered the classic version, try one of these fun twists:

  • Loaded Baked Potato: Top the crispy tots with bacon, cheddar cheese, sour cream, green onions, and chives.
  • Pulled Pork Totchos: Swap the taco meat for barbecue pulled pork, then top with shredded cheddar, barbecue sauce, and sliced green onions.
  • Buffalo Chicken: Toss shredded chicken with buffalo sauce, then finish with mozzarella, blue cheese crumbles, and ranch or blue cheese dressing.
  • Breakfast Totchos: Add scrambled eggs, breakfast sausage or bacon, cheddar cheese, and finish with sliced avocado and salsa.
  • Chili Cheese: Spoon homemade chili over the tots, top with plenty of cheddar cheese, diced onions, and sour cream.

Both Crispy Crowns and classic tater tots work well in this recipe, so use whatever you have in the freezer. That said, if I’m making these specifically for loaded tater tots, I almost always reach for Crispy Crowns.

  • Crispy Crowns: My top pick. They have more surface area for the taco meat and toppings, stay crispy a little longer, and are easier to scoop up with every bite.
  • Tater Tots: A great option if that’s what you have on hand. They create a thicker potato base and crisp up beautifully, but don’t hold quite as many toppings as Crispy Crowns.

No matter which you choose, bake them until they’re deeply golden brown before adding the toppings. The crispier they are, the better they’ll hold up under all that cheesy taco goodness.

How to Get Crispy Tater Tots Every Time

The secret to great loaded tots is starting with a crispy base. Here’s how I make sure they stay crisp, even after adding the toppings.

  1. Bake them a little longer. Follow the package directions, then add a few extra minutes until they’re deeply golden brown. They should be crisp before you add anything on top.
  2. Don’t overcrowd the pan. Spread the tots into a single layer with a little space between them so they crisp instead of steam.
  3. Use the air fryer if you have one. It gives you the crispiest tater tots with very little effort. Just cook according to your air fryer’s directions, shaking the basket halfway through.
  4. Keep the toppings separate until the end. Instead of piling everything onto the tots and baking again, spoon the cheesy taco meat over the top just before serving. This keeps the tots crispy while the cheese stays perfectly melty.

  • Add Some Heat: Pickled jalapeños, fresh jalapeños, hot sauce, or your favorite salsa are all great if you like a little spice.
  • Make It Creamy: Diced avocado, guacamole, or a drizzle of queso take these over the top.
  • Add Crunch: Shredded lettuce, diced red onion, or sliced black olives add texture and freshness.
  • Finish with Freshness: A squeeze of fresh lime juice and a sprinkle of chopped cilantro brighten up every bite.

  • To Reheat: For the crispiest results, spread the tater tots on a baking sheet and warm them in a 400°F oven for 8 to 10 minutes or in the air fryer at 375°F for 4 to 5 minutes. Add fresh toppings after reheating.
  • Make Ahead: The taco meat can be cooked up to 3 days in advance and stored in the refrigerator. When you’re ready to serve, bake the tater tots until crispy, warm the meat, stir in the cheese, and assemble everything just before serving.

If you’re making these for a party or game day, I highly recommend prepping the taco meat ahead of time and waiting until the last minute to assemble. You’ll get the crispiest tater tots and the freshest toppings.

These Loaded Tater Tots are topped with cheesy taco meat and your favorite taco toppings for an easy dinner or appetizer. Crispy, flavorful, and ready in about 30 minutes.

Ingredients
  

  • 1 (32 oz) frozen tater tots or Crispy Crowns
  • 1 pound lean ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • Water (as directed on taco seasoning packet)
  • ½ cup salsa
  • 2 cups freshly shredded cheddar cheese or Mexican cheese blend

Toppings

  • 1/4 cup Sour cream
  • 1/2 cup Pico de gallo
  • 2 tablespoons Sliced green onions

Instructions
 

  • Preheat the oven according to the package directions for the tater tots.
  • Arrange the frozen tater tots in a single layer on a large baking sheet. Bake until they’re deeply golden brown and extra crispy, adding a few extra minutes if needed.
  • While the tater tots bake, cook the ground beef in a large skillet over medium heat, breaking it into crumbles as it cooks. Drain any excess grease.
  • Stir in the taco seasoning and water according to the package directions. Simmer until the sauce has thickened.
  • Add the salsa and stir to combine.
  • Sprinkle the shredded cheese over the taco meat. Cover the skillet with a lid for 2 to 3 minutes, or until the cheese is completely melted. Gently stir until the meat is coated in a creamy, cheesy sauce.
  • Transfer the crispy tater tots to a serving platter or leave them on the baking sheet.
  • Spoon the cheesy taco meat evenly over the tater tots.
