Ingredients

  • 3 cups rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup roughly chopped pecans or walnuts
  • 1/4 cup coconut oil
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree not pumpkin pie filling

Instructions

  • Preheat your oven to 300°F and line a baking tray with parchment paper.
  • In a large mixing bowl, whisk together the oats, brown sugar, salt, pumpkin pie spice, and pecans.
  • In a small bowl, microwave the coconut oil and honey until melted. Stir in the vanilla and pumpkin puree.
  • Combine the wet ingredients with the dry ingredients, mixing until fully incorporated. Spread the mixture evenly on the prepared baking tray.
  • Bake for 40 minutes, stirring every 10 minutes, or until the granola is lightly golden brown.
  • Let it cool completely on the tray before enjoying.
