3 cups rolled oats 1/4 cup brown sugar 1/2 teaspoon salt 1 teaspoon pumpkin pie spice 1 cup roughly chopped pecans or walnuts 1/4 cup coconut oil 1/3 cup honey 1 teaspoon vanilla extract 1/2 cup pumpkin puree not pumpkin pie filling
Preheat your oven to 300°F and line a baking tray with parchment paper.
In a large mixing bowl, whisk together the oats, brown sugar, salt, pumpkin pie spice, and pecans.
In a small bowl, microwave the coconut oil and honey until melted. Stir in the vanilla and pumpkin puree.
Combine the wet ingredients with the dry ingredients, mixing until fully incorporated. Spread the mixture evenly on the prepared baking tray.
Bake for 40 minutes, stirring every 10 minutes, or until the granola is lightly golden brown.
