This quick and easy pickle relish recipe comes together in minutes and DOES NOT need to be cooked! Perfect to top off your grilled favorites all season long!
Finely dice the pickles, red bell pepper, yellow bell pepper, and white onion. If using fresh dill, finely chop it as well.
Place all the diced pickles, bell peppers, onion, and chopped dill into a medium-sized bowl. Pour in the pickle juice.
Stir all the ingredients together until everything is well mixed and evenly coated with pickle juice.
Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 1 hour, or up to 24 hours, to allow the flavors to blend.
After chilling, your pickle relish is ready to serve. Enjoy it as a side with your favorite grilled dishes.
