2 tablespoons sesame oil or your favorite cooking oil 1 cup cooked cubed ham 1/2 cup frozen peas and carrots 4 cups cooked rice that has been cooled 4 large eggs 3 tablespoons soy sauce 1/4 teaspoon pepper 4 green onions chopped
Heat the oil in a large deep skillet over medium heat.
Add the ham and frozen vegetables. Cook for 2 to 3 minutes, or until heated through. Stir in the rice then push to one side.
Whisk the eggs in a small bowl or cup and add to the empty side of the pan. Gently cook and scramble until mostly cooked through.
Remove the pan from the heat and stir the eggs into the rice mixture.
Add the soy sauce, chopped green onion, and season with pepper to taste.
Serve as is or with your favorite main dish recipes!
