Ingredients

  • 4 large eggs
  • 1/2 cup milk
  • 1/2 lb cooked breakfast meat like sausage or bacon
  • 12 oz tater tots
  • 1 cup cheese shredded
  • salt and pepper to taste

Instructions

  • Mist a 9 inch baking dish with cooking spray and set aside for later. Preheat the oven to 375 degrees. 
  • Combine the eggs, milk, and cooked breakfast meat of choice in a large bowl. Add seasonings and whisk to combine. 
  • Pour the egg mix into the prepared pan. Sprinkle with cooked breakfast meat of choice. Spread the tater tots over the egg mixture in an even layer.
  • Bake for 40 to 45 minutes, or until the tater tots are crisp and the a toothpick poked into the center of the egg mixture comes out clean. 
  • Remove from the oven and sprinkle cheese over the top of the casserole. Return to the oven and cook an additional five minutes, or until the cheese has melted. 
  • Serve immediately and enjoy with your favorite toppings or refrigerate and enjoy the next day as a meal prep option.
