Breakfast casserole recipes are not new here on the site. They are so quick and easy to make which means they often make an appearance on our breakfast table. The best part about this specific recipe is that it includes crispy crunch tots! Perfect for any occasion, like Christmas morning or birthdays, or great for just a lazy morning when you want something filling without much work.

Picture the crispy, golden tater tots delivering a satisfying crunch, paired with the gooey, rich meltiness of your favorite cheese. Add in the smoky, hearty notes of bacon or sausage, and you’ve got a taste that’s both robust and comforting. Tater Tot Sausage Breakfast Bake Ingredients

The ingredient list for this tater tot egg casserole is fairly simple and calls for just a handful of ingredients. You can even prepare it the night before giving you a quick meal the next morning.

  • Eggs: Large eggs give you the base for the dish! Full of healthy fats and protein it’s a great start to a hearty meal.
  • Milk: Whisking milk into the eggs help add a little fluffiness. For even more added protein consider using Fairlife or another high protein milk option. I have not tried this recipe with dairy free options. You could also substitute this with sour cream, Greek yogurt, or cottage cheese.
  • Breakfast Meat: Here is where you can get really creative. We have made this with bacon, pork sausage, ham, Canadian bacon… All of the options are equally delicious. Our favorite by far has been turkey sausage, but that is just a personal preference.
  • Tater Tots: Our whole family has voted, and while any tot variety will work, we love the crispy crowns. They are a little more flat and tend to crisp up extremely well.
  • Cheese: Pick your favorite variety, but you can never go wrong with cheddar cheese, sharp cheddar or pepper jack cheese.
  • Salt and Black Pepper: Keeping it basic works well, but you can always add more spices to give it a little flavor boost. Try garlic powder, hot sauce, onion powder, or any of your typical go-to seasonings.
  • Optional Ingredients: Try sprinkling in some green onions, green chiles, or your favorite veggies like onion and bell pepper.

Helpful Tools

  • Casserole Dish (affiliate): The MVP! A good-sized casserole dish (usually 9×13 inches) is essential for assembling and baking your masterpiece.
  • Skillet (affiliate): For pre-cooking meats like bacon or sausage and sautéing any veggies. A non-stick skillet makes the cleanup easier.
  • Mixing Bowls (affiliate): You’ll need at least one for whisking together eggs and other ingredients. Various sizes come in handy.

Recipe Notes:

Can I make the casserole ahead of time?

Absolutely! Assemble the night before, refrigerate, and just pop it in the oven in the morning. Perfect for stress-free hosting!

Can I use frozen tater tots, or do they need to be thawed?

Go ahead and use them frozen! They bake up perfectly in the casserole, saving you a step.

What type of cheese works best?

Cheddar is a classic, but feel free to experiment with mozzarella, pepper jack, or a blend for different flavors.

Can I add vegetables to the casserole?

Yes! Bell peppers, onions, mushrooms, and spinach are great additions. Just sauté them first to remove excess moisture.

How do I know when the casserole is done?

It’s ready when the eggs are set, the cheese is melted, and the tots are golden brown, typically after about 35-45 minutes in the oven.

What’s the best way to reheat leftovers?

A quick zap in the microwave works, but reheating in the oven at 350°F until warm will keep the tots crispy.

How long does the casserole keep in the fridge?

It’ll stay good for about 3-4 days, making it ideal for meal prep.

Is it freezable?

Yes, you can freeze it either baked or unbaked. Just thaw overnight in the fridge before reheating or baking.

Can I customize the casserole with different meats?

Of course! Bacon, sausage, ham, or even ground beef are great options.
