Mint Syrup 1 cup sugar 1 cup water zest of 1 lime 1/2 cup fresh mint leaves divided Cocktail 1-2 limes cut into wedges good quality tequila such as Patron Silver ice club soda
Mint Syrup In a small saucepan, combine 1 cup of water and 1 cup of sugar. Bring to a boil over medium heat, stirring until the sugar fully dissolves.
Once dissolved, remove from heat and stir in the zest of one lime and ¼ cup fresh mint leaves.
Let the syrup cool to room temperature, then strain out the mint and zest. Store in the fridge until ready to use.
Cocktail In a cocktail glass, place 2 fresh mint leaves and squeeze in the juice of one lime wedge.
Gently muddle using the back of a spoon or a muddler—just enough to release the mint’s oils without tearing the leaves.
Add 2 tablespoons of the cooled mint lime syrup to the glass and stir to combine.
Fill the glass with ice, pour in 1 shot (about 1.5 oz) of tequila, and top off with club soda.
Give the drink a final stir, garnish with extra mint or a lime wedge if desired, and enjoy immediately while it’s cold and fizzy.
