Better Than Fruit Snacks?

If you follow me on Facebook, you’ve probably noticed that I LOVE the Downtown SLC Farmers Market! We pack up every Saturday morning and head down to wander from booth to booth looking for great, locally grown produce to stock up on.

Last week I managed to score an outrageous amount of apricots for cheap! I was super excited, then soon realized that I am not even sure if I like apricots! I sure as heck have never cooked with them….

What was I thinking?

I turned to my Facebook fans for a little inspiration, and soon came up with some great ideas! Let’s get this week of apricots started with something super simple that has replaced fruit snacks in our home!

Camping Food: Trail Mix

One of our biggest challenges while camping would be snacks…
It’s super simple to head out for a day of hiking, or bike ridding, and realize you don’t have anything to munch on if you get hungry. Or in our case, when our three year old gets hungry.

So, before I left, I raided the pantry. I was looking for anything that would make a great ‘mix’ of sorts. What I found was a random combination of crackers and treats, but once combined made the ultimate on-the-go snack. My son told me that this trail mix was his absolute favorite thing about the whole weekend. And he loved that we had some left over for when we get home!

Trail Mix

Crackers
{use cheez it’s, gold fish… whatever you have on hand}
Raisins
{plain or yogurt covered}
Pretzels
{again, be creative. Use mini’s, sticks….}
Colored M&M’s
{these are optional}

THROWING THINGS TOGETHER: Raid your pantry. Find anything, and everything, that you thing would be good in a trail mix for you, or for the kiddo’s. Toss it together, and store in a bag. Whenever the time comes to break out the munchies, you are good to go!

I really love that this can be changed to fit your needs. You can use anything that you, or your family, enjoy. So don’t be afraid to follow your instincts! You can ditch the rasin’s, and go for a dried cherry, or throw in some nuts. Or try out teddy grahams and marshmallows? Let me know if you find a combination that is out of this world!

a new way to serve PB&J!

I decided to healthy up my childs menu. It seems so easy to just toss some frozen chicken nuggets into the microwave during those busy week day’s. But seriously… I don’t even know what they put in those things… In fact, I’m not even sure I want to know what is in them!

I’ve put together a huge list of healthy alternatives that should only take me an additonal minute or two to throw together, and posted it right on the front of my freezer. I’m hoping that having that right at eye level will detour me from grabbing frozen foods for my little guy in a pinch.  Today, I’m going to share the CUTEST idea. My grandma actually used to make these for us growing up, with chocolate chips instead of jelly, but still the same general idea.  It’s a peanut butter and jelly… without the bread… sort of…

Here is what you will need to make your own version:

A tart apple
Peanut butter
Jelly (You could substitute this with honey, chocolante chips, marshmallows…)

- Simply slice the apple into slices, clean out any seeds, and smoother in the good stuff.

Dax loves that there is always a star on top of his sandwich. These are actually perfect for outdoor picnic’s, or fun play dates. They are easy to throw together, and taste amazing. If you are planning on making them in advance, spritz the apple with a tiny bit of lemon juice. That will cut down on the ‘browning’. These are also great for after school snacks, or … two in the morning, and still working on a blog post snacks… Not that I’ve done that or anything…

Blueberry Drops

It seems we have a theme this week. Frozen treats.

 I am a tad bit surprised. You see… we are not ice cream eaters. My son likes Popsicles, but that’s about the end of our frozen food love. So the fact that our freezer is slowly filling with chilly snacks has everyone in my home shocked. In a good way.

These are blueberry drops. Probably the best invention ever. I have to give credit to my Grandma for this one. Some of my best childhood memories are of me and my friends sneaking into her giant freezer to snag a couple cookies, and a dixie cup full of these gems. A recent Pinterest Pin reminded me how much I loved these summer time melt-aways, and just how easy they are to make.

Blueberry Yogurt Drops

Blueberry (or any flavor for that matter) Yogurt
Sandwich bag
Parchment Paper
Cookie sheet

Start by lining your cookie sheet with parchment paper. Set that aside. Spoon your yogurt into your small bag, and snip the edge.

Pipe out small dots onto your parchment paper.

Toss them into the freezer for an hour or two, and you have yourself a healthy little snack.

The best part about these is that they are guilt free. I can eat a whole boat load of them and not feel one ounce of remorse…

Maybe not THAT many…
