Guys!!! It’s September which means it’s pumpkin season! I have been itching to get into some fall pumpkin baking but have a pact with my husband that promises no pumpkin before this month. I tend to get a little carried away and it turns out I’m the only one in the house who cares for the flavor. I wanted to start by gently dipping my toes in but when I found Dunkin’ Donuts® Pumpkin Spice Coffee AND M&M’s® in Pumpkin Spice Latte flavor (available exclusively at Target) I decided to go all-in.
Does anyone else get sucked in to the Target seasonal section? It’s like they knew I’d be tempted with their pumpkin flavored aisles of goodness. It didn’t (or did) help that Cartwheel (Target’s coupon app) currently has a Mars AND Dunkin’ Donuts® coupon running. How can you say no when there is a discount involved?! But let’s get back to the recipe. After all, I know you all are super excited to see how I created a biscotti using a cake mix!
I chose to make a biscotti because cupcakes don’t get eaten often here in the One Sweet Appetite home. Cookies, however, get devoured. Especially a good biscotti. A quick little background on the cookie… Biscotti is a twice baked crisp cookie that is amazing paired with a good ol’ cup of coffee. I’ve made it several times in the past (almond and candy cane versions can be found here) but thought it might be fun to simplify the recipe a tad and create a cake mix version. It tastes absolutely amazing fresh out of the oven but I took things a step further and added a little bit of M&M’s® Pumpkin Spice Latte crunch!
When you pull the cookie out of the oven (the second time) you’ll dip it in a melted chocolate and sprinkle some roughly chopped candies right on top. When you pair these with the Dunkin’ Donuts® Pumpkin Spice Coffee you get a triple dose of delicious. The beauty of this is that you can switch it up by trying white chocolate for a whole new flavor!
Cake Mix Pumpkin Biscotti
- 1 box Pillsbury® Perfectly Pumpkin Cake Mix
- 1/4 cup all-purpose flour
- 1/4 teaspoon pumpkin pie spice
- 2 tablespoons butter melted
- 2 large eggs
- 1/4 cup chocolate chips melted
- M&M's Pumpkin Spice Latte Flavor
- Dunkin' Donuts® Pumpkin Spice Coffee
Preheat your oven to 350 degrees. Line a large baking sheet with parchment and set aside.
Whisk together the cake mix, flour, and pumpkin pie spice. Stir in the butter and eggs until fully incorporated.
Form into a 12x4 log on your prepared baking dish. Bake for 25 minutes.
Let you giant cookie cool for 15 minutes. Using a sharp knife slice into 1/2 inch pieces and place cut side down onto your baking tray.
Cook an additional 10 minutes or until crisp.
Roughly chop your M&M's. Dip your cookies into the melted chocolate and immediately sprinkle with candies.
Brew coffee, dip, and enjoy!
