Pumpkin Cake Mix Biscotti Recipe

This pumpkin cake mix biscotti recipe is super simple to make and a great fall flavor! Ideal when served with a cup of coffee.

What is biscotti?
Biscotti is a crisp twice baked cookie that is typically served with an Italian dessert wine or after dinner coffee. It traditionally is made in an almond flavor, but can easily be adjusted. Today I am making a pumpkin version which is perfect for fall!

- Cake Mix- Pumpkin flavored cake mix. I used a 15.25 oz box.
- Flour- All-purpose, or regular white flour, works best in this recipe.
- Pumpkin Pie Spice- I have an amazing homemade version right here, or you can find a pre mixed version in the spice aisle of your grocery store.
- Butter- Salted or unsalted works. Most cookie recipes will call for unsalted.
- Eggs- Large eggs at room temperature are ideal.
- Chocolate- This ingredient is optional.
How to make biscotti from a cake mix:
- Preheat the oven to 350 degrees. Line a large baking sheet with parchment and set aside.
- Whisk together the cake mix, flour, and pumpkin pie spice. Stir in the butter and eggs until fully incorporated.
- Form into a 12×4 log on your prepared baking dish. Bake for 25 minutes.
- Let the giant cookie cool for 15 minutes. Using a sharp knife, slice into 1/2 inch pieces and place cut side down onto your baking tray.
- Cook an additional 10 minutes or until crisp.
- Serve with coffee and enjoy! You can optionally drizzle or dip in chocolate for a pretty finish.
How long does homemade biscotti last?
If stored properly, homemade biscotti will last from two to three weeks.
Keep your cooked and cooled cookies in an air tight container or zip top bag in a cool dry place. You can also freeze your cookies and extent the life for 4 to 6 months.
