I cannot tell you how much I love those belly filling dishes. I live for comfort food and this day provides all of my favorites.
It has turkey. There will be stuffing. Mashed potatoes will surely be one of the main players. No doubt I will make waaaaaay too much food. That is where this Thanksgiving Stuffed Shells Recipe comes into play.

What You’ll Need:
You take all of your turkey day leftovers, add a few fresh ingredients, and stuff them into pasta.
Life could not get any better. This recipe is what I like to consider the ultimate upcycled food. No waste and packed with flavor.
- Olive oil
- Diced onion
- Cheese
- Turkey
- Stuffing
- Green onion
- Mashed potatoes
- Pasta shells
- Gravy
How to make pasta with Thanksgiving leftovers:
- Preheat your oven to 350 degrees. Mist a 9×13 pan with cooking spray and set aside.
- Heat the olive oil over medium heat in a small skillet. Add the onion and celery. Cook 2 minutes or until soft.
- Stir together the cooked onion, celery, cheese, turkey, stuffing, and green onion in a medium sized bowl.
- Spoon about 1 tablespoon of mashed potatoes and 2 tablespoons of the stuffing mixture to each cooked shell. Add each filled shell to your prepared pan.
- Bake 20 minutes or until heated through. Serve with gravy.
Bonus? Leftover gravy makes the PERFECT sauce. I heated mine on the stove and drizzled it over the top AFTER baking. If you find that your gravy has thickened, try stirring in a small amount of chicken stock while heating. It will be good as new.
So. Stinken. Good.
This has to be out go-to and favorite way to use up leftover Thanksgiving food.
How to freeze stuffed shells:
- Add filling to al dente cooked shell pasta.
- Place in a freezer safe pan.
- Cover with sauce (or gravy).
- Wrap tightly in plastic wrap and place in a freezer safe zip top bag.
- Label and freeze until ready to eat.

- 1 Tablespoon Pompeian Organic Extra Virgin Olive Oil
- 2 Tablespoons diced onion
- 2 Tablespoons diced celery
- 1 cup shredded Italian blend cheese
- 1 cup turkey (diced)
- 1 cup cooked stuffing
- 1/4 cup green onion (chopped)
- 1 cup mashed potatoes
- 24 cooked large pasta shells
- turkey gravy
Instructions

I’m sure you could. My suggestion would be to use the crispy onions on top instead of the actual casserole. Try sprinkling them on the pasta before baking! It would add a delightful crunch.
