We recently started to grow our own garden. Fresh tomatoes are the most amazing gift we have gotten from our crop. Especially when it turns into a quick bruschetta. Bruschetta is a tomato, basil, and cheese mixture typically served with a grilled bread rubbed with garlic.
UNBELIEVABLE. Especially when you take it one step farther and put a heaping spoonful on top of chicken for a fresh and fast dinner recipe. The added bonus of this recipe is that you can actually make it all year long by using canned tomatoes! More on that below.
What Is Chicken Bruschetta Made Of?
This bruschetta chicken is also considered low carb, according to a 3rd party recipe calculator. I’m not one to watch my calorie intake, but it makes me feel good to know it’s loaded with healthy ingredients. Here is what you need to get started.
- Chicken Breast: I purchase boneless skinless chicken breast in bulk at Costco and it works phenomenal in this baked chicken recipe.
- Salad Dressing: If you can find sun dried tomato salad dressing in stores, reach for that. If not, a simple Italian dressing will taste equally delicious.
- Tomatoes: Obviously fresh is best, but you can use canned tomatoes in a pinch. I like to use Roma or cherry tomatoes if using fresh and petite diced that have been drained for canned tomatoes.
- Basil: Fresh basil that has been sliced thin. You can actually find this all year round in the refrigerated section in the produce aisle.
- Cheese: We like to switch between shredded parmesan, mozzarella, or a blend of both!
How To Make Bruschetta Chicken In The Oven
- PREP: Preheat the oven to 350 degrees. For more even cooking, slice the chicken lengthwise creating two even sized pieces OR pound to an even thickness.
- CHICKEN: Place the chicken into a glass baking dish. Pour 4 to 6 tablespoons of the dressing over the chicken being sure to cover the entire surface. Turn the chicken and repeat.
- BRUSCHETTA: Stir together the tomato, cheese, basil and 3 tablespoons of dressing. Set aside.
- BAKE: Bake the chicken for 15 minutes. Flip and top with each breast with the tomato mixture. Continue cooking an additional 15-20 minutes, or until the chicken reaches an internal temperature of 160 degrees.
Recipe Notes:
The best way to make sure your chicken does not dry out is to use an instant read thermometer. Cooking the chicken to 160 degrees is key to a fully cooked and juicy piece of meat.

Ingredients
- 11 tablespoons Sun Dried tomato salad dressing* (divided)
- 1 roma tomato (chopped)
- 1/4 cup mozzarella or parmesan cheese (shredded)
- 2 tablespoons basil (chopped)
- 2 small chicken breasts
Instructions

Yum. This looks amazing! A friend just made us bruschetta chicken and instead of the sundried tomato dressing she used a mix of balsamic vinegar and olive oil. This looks and sounds even more flavorful though! Ps. We got our meat thermometer on Amazon and love it 😉
