We recently started to grow our own garden. Fresh tomatoes are the most amazing gift we have gotten from our crop. Especially when it turns into a quick bruschetta.
Bruschetta is a tomato, basil, and cheese mixture typically served with a grilled bread rubbed with garlic.

I piled heaping spoonful of the bruschetta straight on top of a seasoned chicken breast and baked to perfection. Unbelievably simple.
Step by Step Instructions:
- Place the chicken and 2 tablespoons of dressing in a glass baking dish. Make sure you turn the chicken to coat. Toss in your fridge (covered) for a few minutes, or throughout the day.
- Preheat your oven to 350 degrees. Cook your chicken for 15 minutes.
- While that is cooking stir together your tomato, cheese, basil, and remaining dressing. Turn the chicken over and cover with your tomato mixture. Cook an additional 8 to 10 minutes, or until the chicken reaches 160 degrees.

You can also make this on the grill. This is especially wonderful during those warm summer months when grilling is the preferred method of cooking.

Yum. This looks amazing! A friend just made us bruschetta chicken and instead of the sundried tomato dressing she used a mix of balsamic vinegar and olive oil. This looks and sounds even more flavorful though! Ps. We got our meat thermometer on Amazon and love it 😉
