This Baked Bruschetta Chicken is an easy dinner that can be on the table in under 20 minutes! Made with just 5 ingredients: Chicken, sun dried tomato dressing, diced tomato, Parmesan, and basil!

We recently started to grow our own garden. Fresh tomatoes are the most amazing gift we have gotten from our crop. Especially when it turns into a quick bruschetta.

Bruschetta is a tomato, basil, and cheese mixture typically served with a grilled bread rubbed with garlic.

UNBELIEVABLE. Especially when you take it one step farther and put a heaping spoonful on top of chicken for a fresh and fast dinner recipe.

What You’ll Need:

  • Chicken Breast
  • Salad Dressing
  • Tomatoes
  • Basil
  • Cheese

I piled heaping spoonful of the bruschetta straight on top of a seasoned chicken breast and baked to perfection. Unbelievably simple.

Step by Step Instructions:

  1. Place the chicken and 2 tablespoons of dressing in a glass baking dish. Make sure you turn the chicken to coat. Toss in your fridge (covered) for a few minutes, or throughout the day.
  2. Preheat your oven to 350 degrees. Cook your chicken for 15 minutes.
  3. While that is cooking stir together your tomato, cheese, basil, and remaining dressing. Turn the chicken over and cover with your tomato mixture. Cook an additional 8 to 10 minutes, or until the chicken reaches 160 degrees.

You can also make this on the grill. This is especially wonderful during those warm summer months when grilling is the preferred method of cooking.

  • 1 roma tomato, chopped
  • 1/4 cup mozzarella or parmesan cheese, shredded
  • 2 tablespoons basil, chopped
