Say hello to your new favorite quick fix: this Chocolate Chip Mug Muffin is warm, fluffy, and packed with gooey chocolate goodness in every bite. It’s made with Kodiak mix, which means you get that slightly nutty, hearty flavor with a sneaky bit of protein. Perfect for those snacky moments or lazy mornings when you still want something homemade.

The best part? It’s ready in about a minute and requires zero baking skills. Just mix everything in a mug, pop it in the microwave, and boom. Muffin magic. No oven, no fuss, and no sharing required.

Before You Start

The prep for this recipe is dreamily short AND so is the ingredient list! Perfect for a quick breakfast or treat that even little ones can make on their own! Here is what you will need to get started:

  • Milk: We’ve tried several different milk types and have found that dairy milk works best.
  • Butter: Tested with both unsalted and salted. We prefer unsalted for this specific recipe.
  • Vanilla Extract: This works as a flavor enhancer for the muffin.
  • Pancake Mix: Full disclosure, I have only ever made this with Kodiak cake mix. Please comment below if you’ve tried other varieties with success!
  • Brown Sugar: Just a touch to add sweetness. This can be left out in a pinch.
  • Chocolate Chips: Tested with semi sweet, milk chocolate, and every different shape and size. All work beautifully in this recipe.

I’ve tested a lot of mug recipes, and this Chocolate Chip Mug Muffin is one I keep coming back to. It’s soft, not rubbery, and gives that warm muffin comfort without the wait, or the dishes. My teenager even gave it a thumbs up, which basically makes it legendary.

Tip from Jesseca:

Use a wide, microwave-safe mug so it cooks evenly. And if you’re feeling fancy, sprinkle a few extra chocolate chips on top after microwaving for that melty finish.

Customize It

This recipe is super forgiving, so don’t be afraid to experiment with what you have in your pantry!

  • No Kodiak Mix? Swap it with any pancake mix you have on hand. Just note that flavor and texture may vary slightly depending on the brand.
  • Add-ins: Try mixing in chopped nuts, a spoonful of peanut butter, or a few berries for a fun twist.
  • No brown sugar? White sugar works fine, or try maple syrup or honey for a different flavor.
  • Chocolate-free: Not a fan of chocolate chips? Skip them entirely or replace with cinnamon and a sprinkle of sugar for a snickerdoodle-style muffin.

Tips for Success

  • Use a large mug: An oversized mug (at least 12 oz) gives the batter room to rise without spilling over. Smaller mugs = muffin volcano.
  • Don’t overmix: Stir just until combined. Overmixing can make the muffin tough or gummy.
  • Watch the cook time: Microwave power varies. Start with 1 minute and add 15-30 seconds as needed. It should look set on top but still soft—don’t overcook or it’ll dry out fast.
  • Let it rest: Give it 1-2 minutes to cool before digging in. It finishes cooking slightly as it sits, and the texture improves.
  • Mix-ins matter: Stir chocolate chips in at the end to keep them from sinking to the bottom.
  • Melt the butter first: Add it to the mug before the milk so it doesn’t cool and clump when stirred together.

Helpful Tools

  • Mug: This recipe doesn’t need anything fancy, you can actually use almost any mug. But I really love this mug set (affiliate).
  • Mini Whisk: Mixing the batter fully is key to a good cake. I love these mini whisks (affiliate). I also use them for hot chocolate, carnation, and even whipping eggs for scrambles.
  • Baking Spray: You can use cooking spray, like avocado or Pam, but we prefer a baking spray (affiliate). They leave little to no flavor and let the cake flavor shine.

Recipe FAQs

Can I use a different brand of pancake mix instead of Kodiak?

Yes! Any complete pancake mix should work, though the texture and flavor may vary slightly. Just stick to the same measurements.

What size mug should I use?

Go for a large, microwave-safe mug that holds at least 12 ounces. The batter needs room to rise without overflowing.

How do I know when it’s done?

The top should look set and slightly springy to the touch. If it’s still wet in the center, microwave in 15–30 second bursts until cooked through.

Can I double the recipe?

Not in one mug. For best results, make two separate mugs—doubling in one can lead to uneven cooking.

Can I make this without a microwave?

Yes, but it’ll need to bake in an oven safe ramekin at 350°F for about 10–12 minutes. Keep an eye on it since oven times may vary.

Storage and Make-Ahead Instructions

This mug muffin is best enjoyed fresh, straight out of the microwave while it’s still warm and fluffy. That said, if you really need to save it:

  • Storage: Let the muffin cool completely, then cover the mug or transfer to an airtight container. Store at room temperature for up to 1 day or in the fridge for up to 2 days. Reheat in the microwave for 10–15 seconds to bring back some of the softness.
  • Make-ahead tip: Mix the dry ingredients in a small container or baggie ahead of time. When you’re ready to cook, just add the wet ingredients, stir, and microwave. It’s a great way to speed up busy mornings!

Chocolate Chip Mug Muffin

Author Jesseca
Prep: 5 minutes
Cook: 2 minutes
Total: 7 minutes
Serves: 1 muffin
Start your day or satisfy your sweet tooth with this incredibly delicious Chocolate Chip Mug Muffin! Loaded with protein thanks to the addition of Kodiak Cakes Mix!

Ingredients

  • 3 tablespoons milk
  • 1 tablespoon butter (melted)
  • 1/4 teaspoon vanilla extract
  • 1/4 cup Kodiak Cake Mix
  • 1 tablespoon brown sugar
  • chocolate chips (optional)

Instructions

  • Choose a large (12 oz or bigger), microwave-safe mug to prevent overflow. Lightly grease the inside with nonstick spray or butter if desired, which helps with cleanup later.
  • Add the milk, melted butter, and vanilla extract to the mug. Use a fork or small whisk to mix until fully combined and smooth.
  • Stir in the Kodiak Cake Mix and brown sugar. Mix until just combined—don’t overmix. The batter will be slightly thick.
  • Fold in a few chocolate chips if using, or sprinkle some on top for extra chocolatey goodness.
  • Place the mug in the center of the microwave and cook on high for 1 minute. Check the center with a toothpick—if it comes out clean or with a few moist crumbs, it’s done. If still wet, continue cooking in 15- to 30-second intervals, checking after each round.
  • Let the mug muffin sit for 1–2 minutes before eating. It will be hot! Enjoy straight from the mug or transfer to a plate if you’re feeling fancy.

Notes

It takes my microwave two minutes total to cook this muffin.
