Ingredients You’ll Need

Before we dive into the mixing, let’s break down what you’ll need to make these boozy popsicles shine. Each ingredient plays a key role in balancing flavor, texture, and that signature margarita punch with a creamy twist.

  • Tequila – Go for a silver or blanco tequila for a clean, crisp flavor. Don’t overdo it. Too much alcohol can keep your pops from freezing properly.
  • Orange liqueur – Triple sec or Cointreau both work. This adds the classic citrusy depth you’d expect in a margarita.
  • Fresh lime juice – Fresh is best! Bottled juice can taste flat or bitter.
  • Frozen limeade concentrate – This gives a bold lime flavor and adds just the right amount of sweetness and tartness.
  • Granulated sugar – Optional, but helpful if you like a sweeter popsicle. Taste your mix before freezing and adjust.
  • Coconut milk – The secret twist! It gives the popsicles a creamy texture and tropical vibe without overpowering the margarita flavor.

Once you’ve gathered everything, you’re just a quick blend away from frozen cocktail heaven. Let’s get these chilling!

These margarita freeze pops were a total hit at our last BBQ. Light, citrusy, and just the right amount of boozy. They taste like summer on a stick. The coconut milk gives them a creamy finish that sets them apart from your average frozen margarita. Even my friends who “don’t love tequila” went back for seconds.

Tip from Jesseca:

If you’re serving these at a party, pre-release the popsicles from the molds and store them in a lined tray in the freezer. That way, you’re not scrambling to get them out one-by-one while your guests wait!

Substitutions and Variations

Want to mix things up? These Margarita Popsicles are super flexible, so you can tweak the flavor or make them a little more kid-friendly (minus the booze, of course).

  • No tequila? Swap it for rum to make a coconut-lime daiquiri version, or skip the alcohol entirely for a refreshing mocktail pop.
  • Try different citrus. Swap some of the lime juice for lemon or grapefruit juice to change the flavor profile without losing that tart kick.
  • Make them creamier. Sub the coconut milk for Greek yogurt or sweetened condensed milk for a richer, more dessert-style popsicle.
  • Go spicy. Add a pinch of Tajín or chili powder to the mix or sprinkle it on top just before serving for a spicy-salty bite.

These are meant to be fun and totally customizable, so don’t be afraid to get creative with what you’ve got on hand!

How To Make A Margarita Popsicle

Making these Margarita Ice Pops are as easy as blending, pouring, and freezing. No fancy steps, just a few ingredients and a little patience while they set up in the freezer. Quick Steps:

  1. Add all of the ingredients to a blender.
  2. Pulse until smooth and fully combined.
  3. Pour into popsicle molds, insert sticks, and freeze until solid (at least 6 hours).

That’s it! In just a few simple steps, you’ve got a batch of frosty, boozy popsicles ready to cool you down and impress your friends.

Storage and Make-Ahead Instructions

These Popsicles are perfect for prepping ahead so you’re always just a freezer grab away from happy hour. Once frozen solid, they can be stored in the molds or removed and transferred to a freezer-safe bag or container.

  • To store: Keep popsicles in the freezer for up to 2 months. If you remove them from the molds, wrap each one in parchment paper or plastic wrap to prevent sticking, then place them in a sealed freezer bag.
  • To make ahead: Blend and fill your molds up to a day in advance before freezing. They’ll need at least 6 hours to fully freeze, but overnight is best for a solid texture. If you’re making them for a party, prep a batch a few days early so you’re not scrambling last minute.

Once they’re frozen, they’re ready whenever you are, no mixing, no mess, just grab-and-go margarita magic.

Tips for Success

  • Don’t overdo the alcohol. Too much booze and your popsicles won’t freeze well. Stick to the recommended amount to keep them firm but still fun.
  • Taste before freezing. Give the mix a quick taste after blending. Want more lime? A bit sweeter? Adjust before pouring it into the molds.
  • Use a funnel or spouted container. Makes pouring into molds way easier and less messy.
  • Freeze overnight. While they can set in about 6 hours, letting them freeze overnight guarantees a solid texture that holds up.
  • Run molds under warm water. Just a few seconds under warm water helps release the popsicles cleanly without breaking them.
  • Add a salted rim effect. Before serving, dip the tips of the popsicles in lime juice and then coarse salt for a fun twist on the classic margarita glass.

Recipe FAQs

Can I make these without alcohol?

Yes! Just leave out the tequila and orange liqueur and replace them with more limeade and a splash of orange juice. You’ll still get that tangy citrus flavor without the booze.

Why won’t my popsicles freeze all the way?

Too much alcohol can prevent them from freezing solid. Stick to the measured amounts and make sure to use full-fat coconut milk or a creamy alternative to help them set properly.

How long do they need to freeze?

At least 6 hours, but overnight is best for that firm, icy texture.

Can I use bottled lime juice?

Technically, yes—but fresh lime juice gives you a brighter, cleaner flavor. If you’re in a pinch, use a high-quality bottled version with no added preservatives.

What kind of tequila works best?

Silver or blanco tequila is the go-to for margaritas. It has a cleaner, more neutral flavor that mixes well in frozen treats.

Do I need a special mold?

Nope! Any popsicle mold will work. You can even use small paper cups and popsicle sticks if you’re in DIY mode.

Ingredients

  • 3 oz tequila
  • 1 oz orange liqueur
  • 2 tablespoons lime juice
  • cups limeade
  • 1/2 cup coconut milk*
  • 1 tablespoon sugar
  • 1 pinch salt

Instructions

  • Add ingredients to a blender. Combine the tequila, orange liqueur, lime juice, limeade, sugar, and coconut milk with the salt in a high-powered blender.
  • Pulse the mixture for 15–30 seconds, or until everything is well blended and smooth. Taste and adjust sweetness if needed.

  • To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull them out.
