Whisk the sauce before adding the meatballs. Taking an extra minute to fully dissolve the au jus mix prevents little pockets of seasoning and gives you a smoother gravy.
Use cold water for the cornstarch slurry. Cornstarch mixes much more easily with cold water. If you add it directly to the hot gravy, you’ll end up chasing stubborn lumps.
