Mimosas are such a simple way to celebrate any occasion, and are perfect for any time of day, but did you know you could make them with more than orange juice? This is honestly the easiest apple champagne cocktail and all you need is a quality apple cider and chilled bottle of champagne!
These quick cocktails are a staple for us on Thanksgiving. Nothing is more fun than baking our feast while sipping on a tall chilled glass of bubbly.
INGREDIENTS FOR APPLE CIDER MIMOSAS
This recipe was inspired by my classic mimosa recipe. The only difference was a switch from orange juice to apple cider. This simple bubbly cocktail is perfect to serve with breakfast or brunch! Here is what you need to get started:
- Apple Cider: Most of the flavor from this cocktail is going to come from the apple cider. Do not substitute the cider with apple juice. It will not be the same and you will miss out on the fall spices that come with a delicious cider. When in season, I try to pick up homemade apple cider from some of our local orchards. When that is not an option I reach for Musselman’s.
- Champagne: A dry champagne is what you will want to reach for if you aren’t sure where to start. Dry champagne is a little less sweet which is ideal when pairing with juices. OR you can opt for something a little less expensive and just as delicious like Prosecco. Prosecco is sparkling wine and you can normally pick up a bottle for around $10-$15 dollars.
- Apple Slices: Not required, but a beautiful addition to the edge of a glass. I like to dip the slices in lemon juice so they don’t brown as quickly.
Nothing is better than an apple cider mimosa with cinnamon sugar rim. Which means that I had to include the simple rim instruction in the recipe card below.
HOW TO MAKE CHAMPAGNE CIDER
Pro Tip, start by chilling the cider and champagne overnight. Starting with a cool beverage means you can pour and sip immediately. I also like to chill the glasses that I plan to use in the freezer for 10 minutes or so.
SINGLE SERVE
Serving just one or two people? Making the drinks individually is the way to go. In between servings you can keep the cider and champagne chilled in the refrigerator.
- Fill a tall glass half full with apple cider.
- Fill the remaining way with champagne or sparkling wine.
I like to start with a 50/50 ratio and adjust per taste.
PITCHER APPLE CIDER MIMOSAS
Ready for a game changer? If you’re serving a crowd, you want to make this a apple cider mimosa pitcher recipe.
- Fill a pitcher half with cider and top with champagne or sparkling wine.
- Serve immediately.

- Champagne Flutes: Necessary? No. But they sure are fun to drink out of. We use our stemless flutes (affiliate) for mimosas, cocktails, and plain ol’ juice.
