We like to use coconut milk in this recipe. It adds a subtle hint of flavor without overpowering the pumpkin. Another great option is almond milk or half and half.

Hi Jessica! I loved this coffee creamer recipie! It is so yummy! But I do have a question…I used coconut milk, and the next morning it was super thick. Is that normal..was it the coconut milk that made it like pudding?
Hi Julie, if it was canned coconut milk and stored in the refrigerator then yes. It will be a little thicker, like pudding. You can heat it up or add a little milk or water to thin it out.
