- Parmesan Cheese: This cheese offers a nutty, sharp kick that balances the tanginess of the Caesar dressing.
- Croutons: My favorite secret ingredient. I lightly crush croutons and sprinkle them into the filling before rolling my wrap. It adds texture and some delicious flavor. For this one, you can use store-bought or homemade croutons. Both are equally delicious.
- Dressing: creamy, tangy, with a hit of garlic and a whisper of anchovy. Yes, anchovy! Don’t knock it till you’ve tried it; it gives the dressing that irreplaceable umami oomph. - CHOP: Allow the chicken to cool for a few minutes and then chop into small pieces.
- ​TOSS: Add the chopped chicken, lettuce, cheese, crouton crumbles, and dressing into a large bowl. Add tomatoes or other vegetables if using. Toss gently to combine until the dressing is coating most of the filling.Â
- ROLL: Spread 1/4 of the mixture onto the center of a large tortilla. Leave about 2 inches empty around the edge for folding freedom. Fold in the sides of the tortilla toward the center but not all the way over the ingredients. Now, take the edge closest to you and fold it over the tucked-in sides and ingredients, squeezing everything together like you’re giving it a lil’ hug. Hold everything in place while you roll the wrap away from you, towards the remaining open edge. Apply gentle pressure to make sure it’s snug but not smothered.
