Finding a filling dinner that is also a family favorite can be tricky. THIS quick lasagna soup checks off all of the boxes! It is loaded with flavor, takes just about 30 minutes, and is loved by every member of my family!
Perfect for cold winter days or chilly fall afternoons. This soup brings the flavor of lasagna with the ease of a one pot recipe! Top with ricotta cheese and fresh basil for the perfect finishing touch.

What You Need:
Now, this recipe is one of my favorites for a few reasons. Number one, it is so easy to customize based off of what you have on hand. I’ll cover some of the important ingredients here, but the full list can be found in the recipe card below.
- Sausage: We really love this with a spicy Italian sausage. However, I have also made this with mild or ground beef with great success!
- Italian seasoning- This is one of the only seasonings in this recipe but also one we use frequently in our kitchen. The one spice blend I recommend everyone own!
- Chicken broth- Low sodium is preferred, but you can use any broth you have on hand.
- Parmesan cheese
- Half and half
- Lasagna noodles- Swap with noodles of choice. The lasagna noodles can be tricky for little ones. We often swap this with bowtie pasta.
How to make lasagna soup:
- Combine the sausage and onion in a large pot. Cook until the onion is translucent and the sausage is brown and crumbled.
- Add the garlic and cook an additional 2 minutes.
- Stir in the Italian seasoning, tomato paste, chicken broth, and diced tomatoes. Bring to a boil. Lower the heat and simmer for 10 minutes.
- Stir in the Parmesan cheese and half and half. Simmer an additional 10 minutes. Add the cooked noodles.
- Serve with ricotta and fresh basil

Can you cook lasagna soup in a slow cooker?
You sure can. In order to cook in the slow cooker you will need to cook the sausage and onions before adding to your slow cooker. Combine the canned tomatoes, broth, seasonings, tomato paste in your slow cooker. Let it simmer on low up to six hours. Add uncooked lasagna noodles and Parmesan cheese 30 minutes before you are ready to serve. Top with ricotta and fresh basil.
I feel like I should add a small disclaimer. We have made this soup both ways and prefer the non-slow cooked method. It takes less than 30 minutes and the noodles always turn out a little more al dente, which we love.
Can you substitute hamburger for sausage in soup?
Definitely. However, I personally feel that a lot of the flavor will come from the sausage. If you happen to have ground beef on hand and decide to go that route, be sure to season liberally and taste as you go.
What is the best type of sausage to use in Lasagna Soup?
We prefer to use spicy breakfast sausage or Italian Sausage. Both give a slightly different flavor but are equally as tasty!

SO GOOD. We made this today to take to a party. Everyone loved it! I did make it with hamburger meat instead of sausage and served with cottage cheese instead of ricotta since that is what I had on hand.
