Garden tomatoes

Few things in my life get me more excited than homegrown produce. I have dreamed of growing my own garden for years. The problem? I lack a green thumb.

Lucky for me my husband is a master when it comes to nurturing and growing plants. My neighbor excels in this department as well which means I have been overrun with beautiful and delicious veggie options.

Our go-to dinner of choice?

Spaghetti With Fresh Tomato and Basil Sauce Ingredients:

  • Fresh tomatoes
  • Garlic
  • Olive oil
  • Salt and pepper
  • Red pepper flakes

You can also top things off with fresh cut cherry tomatoes. I personally feel like you can never have too many tomatoes in a pasta dish, am I right??

How to make pasta with fresh tomatoes:

  1. Heat 3 tablespoons of olive oil in a large deep skillet until hot. Add your tomatoes, garlic, salt, pepper, and crushed red pepper.
  2. Mix together well. Lightly mash the tomatoes with the back of a fork or a tomato masher. Simmer 30 minutes over medium heat, stirring occasionally.
  3. Cook the pasta noodles half of the time suggested on the box. Drain.
  4. Add the partially cooked pasta to your tomato mixture. Cook until your pasta is al dente.*
  5. Remove your pan from the heat. Stir in remaining 2 tablespoons of olive oil, fresh basil, cheese, and cherry tomatoes if using.
