Fudgy Brownie Recipe

This easy brownie recipe tastes EXACTLY like the cosmic brownies you grew up loving. Moist, fudgy, and a family favorite!



 

When I started testing this recipe, I had one goal in mind. I wanted a brownie that would hold up in a lunchbox and give my kid the same taste of those color candied topped Cosmic Brownies.

Mission accomplished.

This homemade brownie has a texture somewhere in between cake and super fudgy. It is packed with chocolate flavor and pairs well with a tall chilled glass of milk.

But really, the best part is that it has won the approval of my son. He LOVES these brownies. Whenever we have a dessert night this is his top request. Give them a try and let me know what you think!

Why are my brownies cakey?

Cake like brownies can be appealing to some, but a recent poll on Instagram suggested that more of you like a fudge like brownie!

This recipe tends to land right in the middle. It isn’t really cake like but doesn’t have that moist fudge texture either. If you want a more fudge texture, leave out one of the eggs. Seriously. It won’t hurt anything and leaves you with a more fudgy brownie texture.

Tricks to make perfect brownies every single time:

  1. Use room temperature ingredients. I can’t stress this enough. Room temperature ingredients ensure that every ingredient is incorporated fully AND allows you to hand mix. Why is hand mixing so important? See the next tip!
  2. Hand mix. Over mixing your batter can leave you with dry dense bars. Make sure you use either a whisk or hand mixer. If you absolutely must use a stand mixer, keep it at low speed and scrape the sides regularly.
  3. Check your brownies halfway through baking. Oven temperatures can vary. While it only takes my oven 20 minutes for these to be done, others have seen it take as little as 15 and as long as 30.
  4. Use parchment paper. Line your pan with parchment paper!! This does more than help your brownies not stick to the pan. When you remove them from the oven, grab the sides of the paper and immediately move to a cutting board or cooling rack. This helps stop the baking process and keeps your brownies moist.

  • Butter
  • Granulated sugar
  • Brown sugar
  • Eggs
  • Pure vanilla extract
  • Cocoa powder
  • All-purpose flour
  • Baking powder
  • Salt

How to make this fudgy brownie recipe:

  1. Preheat your oven to 350 degrees.
  2. Cream together the butter with both sugars. Add the vanilla and eggs and stir until combined.
  3. Whisk together the cocoa, flour, baking powder and salt. Stir into the wet ingredients and pour into a parchment lined 9×13 pan. Bake 30-35 minutes or until a toothpick comes out clean.

  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 3/4 cup cocoa powder
  • 1 cup all-purpose flour

  • ¼ teaspoon salt

Instructions
