The classic fall flavor turned truffle! These pumpkin spice latte truffles are incredibly simple to make and only 5 main ingredients!

It is no secret I am OBSESSED with truffles. They are all over my website and my most requested treat to make around the holiday’s. My husband seriously cannot get enough of these and they are so simple to make!

Recipe Features:
- Minimal Ingredients: This recipe only uses 5 base ingredients! six total if you could the chocolate coating. And I didn’t use any crazy cookie flavor. I stuck with one that is readily available year round.
- Fall Flavor: PUMPKIN is the ultimate fall flavor, and this recipe is definitely packing.
- Easy Beginner Recipe: The beauty of these truffles is that they are a no-fail dessert. They don’t have to be perfect in shape or size – but always end up looking amazing.
What you’ll need:
This recipe calls for minimal ingredients. Some of which you probably already have on hand! Full list of ingredients and amounts listed below in the recipe card.
- Sandwich Cookies: I like to reach for Golden Oreo’s (affiliate) but really and vanilla sandwich cookie should work. Do not use double stuffed.
- Pumpkin Pie Spice: This can get a little pricy, but you can make your own with this easy recipe.
- Espresso Powder: Or Instant coffee. This is what gives the truffles their latte flavor.
- Pumpkin: Only use pure pumpkin puree. Not pumpkin pie mix.
- Chocolate: White chocolate can be a little tricky if you are a beginner. I suggest reaching for candy melts or vanilla almond bark.
Step by step instructions:
- Place the sandwich cookies into a food processor (affiliate) or high powered blender (affiliate). Pulse until fine crumbs.
- Add the cookie crumbs, pumpkin puree, cream cheese, instant coffee granules and pumpkin pie spice to a mixing bowl. Use a hand mixer (affiliate) and beat at low speed until fully combined and the dough forms.
- Using a scoop,(affiliate) or measuring spoon, create your truffles. I like to make mine about 1-1/2 to 2 tablespoons. Place them on a parchment lined tray and place in the freezer for 15 minutes.
- While the truffles are chilling, melt your candy melts or white chocolate according to the package directions. I like to do this in a tall measuring cup.
- Remove the truffles from the freezer. Roll in your clean hand to form a smooth ball. Dip in the chocolate and place back onto the parchment lined baking tray (affiliate).
- Immediately add sprinkles or cookie crumbs for decorations.
- Allow the truffles to set and enjoy!
Pumpkin Spice Latte Truffles Tips and FAQ’s:
While these are super simple to make, there are a few tricks I have learned over the years that make it even easier. Here are a few of my suggestions:
- You are using pumpkin, so it is best to keep these stored in the refrigerator in a secure container.
- Taste the “dough” before you form your balls. If you need a touch more pumpkin pie spice, add it before you form the truffles.
- I like to keep the truffles in the refrigerator while I dip them in chocolate. I work with 4 or 5 at a time to keep them chilled.
Tips for dipping truffles in chocolate:
- If you chocolate is too thick for dipping, add a small spoonful of shortening. This helps to thin out the mixture making it cover the truffles evenly.
- Work quickly. The chocolate will start to set almost immediately. So having your toppings ready to go will help speed up the process.
- Not sure how to cleanup? Dried chocolate cleans out of glass quickly with a little soap and hot water.
