This easy breakfast casserole recipe is made with sausage, eggs, and cheese- plus a secret ingredient! Ready for the oven in minutes, which makes it the perfect no-fuss savory breakfast recipe!

This has every element of a good breakfast. The sausage, hash browns, eggs, Bisquick… It’s just a baking dish full of deliciousness and perfect for a crowd.

The beauty is that you can quickly cut it in half- making it perfect for a smaller family- OR double it for a large crowd. And did I mention it is also freezer friendly? That makes it ideal for busy weekdays.

I love it so much that I served it at the waffle bar baby shower I hosted for my darling sister in law. It was the star of the show. Somehow it shined through all of the sweet confections spread across the table and was gone in under 10 minutes.

Breakfast Bake Ingredients

All of the ingredients listed below are easy to adjust. You can even find pre chopped peppers and onions in the freezer section of most grocers- talk about convenient! You can also make this recipe ahead of time which plants it firmly as our go-to christmas breakfast casserole!

  • Breakfast Sausage- I always reach for spicy breakfast sausage, but this would be equally delicious with a mild version. I do recommend not using maple sausage.
  • Peppers and onion- Red and green pepper add a small punch of flavor to this already delicious breakfast casserole.
  • Shredded Hash Browns- Found in the freezer section, these make all the difference in the texture of the dish.
  • Cheese- We love a good cheddar, but you could easily substitute pepper jack or swiss!
  • Bisquick- The secret ingredient. Bisquick pulls everything together and gives it a sturdy shape. Don’t have any on hand? Try making your own with this easy pancake mix recipe.
  • Milk- We use 2% milk for almost every recipe. This specific dish would be fine with whole or skim.
  • Eggs- Large eggs.
  • Salt and Pepper- Season to taste. Want more bang? Add a pinch of garlic powder!

How to make an easy breakfast casserole:

  1. Preheat the oven to 400 degrees.
  2. Grease a 9 inch baking dish with cooking spray and set aside.
  3. Cook the sausage, peppers, and onions in a large sized skillet until the sausage is browned and the peppers have slightly softened, about 5 to 7 minutes.
  4. Stir the hash browns and cheese into the meat mix.
  5. Transfer to the prepared dish.
  6. Whisk the Bisquick, milk, eggs, salt and pepper together in a large measuring cup until smooth. Pour evenly over the sausage mix.
  7. Bake for 45 minutes or until a knife comes out clean.
  8. Serve warm.
Can you make breakfast casserole ahead of time?

Yep! In fact, we do this frequently. Assemble the casserole up to 24 hours in advance. Cover tightly and keep refrigerated until ready to bake.

How long can breakfast casserole be refrigerated before baking

We have assembled this casserole up to one day in advance with success. Keep it covered tightly with plastic wrap in the refrigerator. Bring to room temperature before baking according to the recipe card.

How do you know when an egg casserole is done?

The easiest way to know if this breakfast casserole recipe is done cooking is by inserting a knife into the center of the dish. If it comes out clean, the recipe is ready to serve.

Can you freeze breakfast casserole?

You can! Freezing eggs is super convenient and leaves you with a quick grab breakfast for busy mornings. Here is how to freeze this breakfast casserole with hash browns:

  • Follow the instructions through cooking.

  • Allow the casserole to cool completely.

  • Slice into serving sizes.

  • Place each serving into a sandwich sized zip top bag. Seal tightly.

  • Place all of the filled bags into one gallon freeze bag.

  • Label and freeze for three to six months.

    Ingredients
      

    • 1 12 oz breakfast sausage
    • 1/2 cup chopped peppers red and green
    • 1/4 cup chopped onions
    • 2 cups shredded hash browns
    • 1 cup shredded cheese
    • 1/2 cup Bisquick
    • 1 cup milk
    • 3 large eggs
    • salt and pepper to taste

    Instructions

    • Preheat the oven to 400 degrees. Grease a 9 inch baking dish with cooking spray and set aside.
