Sausage Breakfast Casserole Ingredients
All of the ingredients listed below are easy to adjust. You can even find pre chopped peppers and onions in the freezer section of most grocers- talk about convenient! You can also make this recipe ahead of time which plants it firmly as our go-to christmas breakfast casserole!
- Breakfast Sausage– I always reach for spicy breakfast sausage, but this would be equally delicious with a mild version. I do recommend not using maple sausage.
- Peppers and onion– Red and green pepper add a small punch of flavor to this already delicious breakfast casserole.
- Shredded Hash Browns– Found in the freezer section, these make all the difference in the texture of the dish.
- Cheese– We love a good cheddar, but you could easily substitute pepper jack or swiss!
- Bisquick– The secret ingredient. Bisquick pulls everything together and gives it a sturdy shape. Don’t have any on hand? Try making your own with this easy pancake mix recipe.
- Milk– We use 2% milk for almost every recipe. This specific dish would be fine with whole or skim.
- Eggs– Large eggs.
- Salt and Pepper– Season to taste. Want more bang? Add a pinch of garlic powder!

Variations of Breakfast Casserole with Sausage
This casserole is super forgiving, which means you can tweak it based on what you have or what your people actually eat. Don’t overthink it, just swap and go.
- Switch the meat: Not a sausage fan? Try cooked bacon, diced ham, or even ground turkey sausage. Just make sure it’s fully cooked before adding in.
- Change the veggies: Peppers and onions are classic, but mushrooms, spinach, or even zucchini work great. If you use watery veggies, cook them down first so your casserole doesn’t get soggy.
- Mix up the cheese: Cheddar is a safe bet, but Monterey Jack, pepper jack, or a Colby blend all melt beautifully and add a little something extra.
- Make it a little spicy: Add diced green chiles, a pinch of red pepper flakes, or use hot breakfast sausage for a subtle kick.
- Go meatless: Skip the sausage and load it up with veggies and cheese. It still bakes up hearty and filling.
- Prep it ahead: Assemble everything the night before, cover, and refrigerate. In the morning, just pour over the egg mixture and bake. Perfect for holidays or busy mornings.
It’s hard to mess this one up, which is exactly why it’s a go-to when you’ve got people coming over.
