Did you know that TODAY is Homemade Soup Day?? It seems fitting since I recently came up with the most amazing Slow Cooker Taco Soup.
I recently went from being a full-time stay at home mom/blogger to a full time working woman and let me tell ya… It’s not easy to find a good balance. I think the first week I came home every day and went straight to bed. I was exhausted after getting up early, working all day in a dentist office, and heading home to play with my kiddo + husband and puppy. Dinner was the LAST thing on my mind. In fact, I’m pretty sure there was one day that my husband sent me a sweet text asking what I had in mind for food and my response was a less than pleasant “I can’t even thing about this right now.”
It was around that time that I realized I better think about some ways we can make dinner super easy. That weekend I made a bunch of freezer meals like my Lasagna Stuffed Shells, Easy Chicken Cordon Bleu, Cajun Chicken Pasta, and Veggie Packed Pasta Sauce with meatballs. All great options for a last minute meal ready to go but I also wanted to dust off my slow cooker and make a few belly warming soups. That’s where this simple slow cooker taco soup comes in.
The plan was to actually make an enchilada style soup but as I started to toss in ingredients I realized this recipe was more taco. One day I will make that dream a reality but this version is so tasty that we might add it into our regular menu rotation! It’s especially nice that all of the ingredients get mixed into your slow cooker, covered, and forgotten for the day. You come home to the most amazing smelling home and ready to dive right in.
- 1-1/2 lbs chicken breast, uncooked
- 1 teaspoon garlic, minced
- 1 (14oz) can chicken broth
- 1 can rotel or 1 cup salsa
- 1 cup corn (we used frozen)
- 1 can black beans, rinsed and drained
- 1 cup onion, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- sour cream, cheese, chips or other desired toppings
- Place the first 11 ingredients in your slow cooker. Cook for 4-6 hours.
- 1 hour before you are ready to eat remove the chicken and shred before placing back into the soup.
- Top with cheese, sour cream, or chips.
