- Ground Beef: When it comes to picking the perfect ground beef for your flavor-packed fiesta, lean ground beef is the star of the show. It strikes a fantastic balance between rich flavor and lower fat content, ensuring your taquitos are juicy without being overly greasy.
- Seasoning: You have so many options when it comes to seasoning. Use the classics of salt and pepper, a taco seasoning, or my personal favorite: Livia’s.
- Enchilada Sauce: You can use a homemade sauce or store bought. I really like the flavor of Hatch.
- Cheese: Classic cheddar, pepper jack, or a Mexican blend work well. Get creative and use what you love.
- Tortillas: Here’s the secret, you can use unbaked tortillas or fully baked. Both work and both provide a unique flavor that takes these over the top. The recipe card includes both instructions.
How To Make Cheesy Beef Taquitos
Pro tip, you don’t need any fancy equipment for this recipe. However, it can be super helpful for cleanup by lining your baking tray with parchment paper.
- PREP: Heat a large skillet over medium heat.
- COOK: Add the ground beef to the heated pan. Cook and crumble until browned, about 3 to 5 minutes. Season with your favorite seasonings.
- FILLING: Stir in the enchilada sauce and shredded cheese. Mix until combined and melted.
- ROLL: Spoon 2 heaping tablespoons of the meat mixture onto the lower half of a tortilla. Roll tightly into the taquito shape and place seam side down on a baking tray.
- BAKE: Bake at 400 degrees for 12-15 minutes, flipping once halfway through, or until lightly browned.

While the recipe is designed for beef, you can definitely swap it out for shredded chicken if that’s your preference. I do, however, recommend you try my chicken taquito recipe.
Absolutely! You can assemble the taquitos and freeze them before cooking. Just remember to wrap them tightly plastic wrap to prevent freezer burn.
Pop those frozen taquitos in a preheated oven at 350°F (175°C) for about 15-20 minutes until they’re crispy and heated through.
