Cheesecake Stuffed Strawberries

This Cheesecake Stuffed Strawberries recipe is the perfect quick treat! Made with fresh strawberries that are stuffed with cheesecake filling and sprinkled with graham crackers. The perfect easy dessert recipe and a party must-make!

I can confidently say this is a no-fail recipe. Stuffed strawberries are SO easy to make and take less than 20 minutes to whip up, thanks to the use of store bought filling. Even if you decide to make your own, you’re looking at less than 30 minutes total. The natural sweetness of the berries paired with the tang of cheesecake is unmatched. Add in some graham cracker crumb pieces and it’s like a bite of cheesecake with every berry.

Perfect for any occasion. We like to pull them out for Valentine’s Day, as a Mother’s Day treat, or for any birthday. Quick, simple, and loved by all.

Stuffed Strawberry Ingredients

I mentioned that these cheesecake filled strawberries only have three ingredients, which is crazy to me that it has taken me so long to put this together. The idea came by when I saw them served at a party and stuck with me until last February. Served at a family party, they were the STAR of the table. Here is what you need:

  • 1 pint of strawberries: Washed and hulled. I HIGHLY recommend purchasing a berry huller (affiliate). This little gadget was under $10 and helped me finish a large batch in a snap.
  • Cheesecake Filling: I used store bought no bake cheesecake. It’s next to the cream cheese in most grocers and cost around $5 for a giant tub.
  • Graham Crackers: Just a few crackers, crushed to crumbs. This addition is so simple but adds that wonderful buttery flavor that you get from cheesecake crust.

How To Make Strawberries Filled With Cheesecake

  1. PREP: Wash the berries and dry them fully before beginning. I like to fill a bowl with 4 parts water to 1 part white vinegar. I place the berries into a colander and submerge them into the water. Let them soak for 15 minutes, rinse, and dry.
  2. HULL: You can use a special tool to hull the berries, which does make it easier, or you can use a pairing knife. Insert the knife at a slight angle on the top of the berry, keeping close to the stem. Cut a circle or cone shape around the stem, creating a hole big enough to fill. Carefully pull the stem with your fingers to remove and discard.
  3. FILL: Place the filling into a piping bag, or a zip top bag with the corner sniped off, and pipe into the center of each berry. Press the top of the filling into graham cracker crumbs and set on a serving plate.
  4. CHILL: Serve immediately, or chill until ready to serve.

Helpful Tools

  • Strawberry Huller: I made these first with a pairing knife and once with a berry huller (affiliate). The huller made things super quick and easy, making it worth the $8 price tag. I will use this regularly.
  • Piping Bags: While these aren’t necessarily a must have, they are incredibly helpful when filling the berries. You can get 100 piping bags (affiliate) for around $10, which is a steal! They will last forever.
