I am a sucker for a good snack recipe and these nachos land smack in the center of that category. Perfect for snacking, appetizers or even a quick dinner! Loaded with ground beef seasoned with taco seasoning, melty cheese, and all of the toppings your heart could desire.

This recipe is so perfect for picky eaters because you are in control of the toppings! Filling, thanks to the proteins, and you can even sneak in a veggie or two!

Nacho Ingredients

Keep it simple! You don’t need much to make a loaded nacho recipe that absolutely dominates the snack table. Here’s what we use:

  • Ground Beef: Cooked and crumbled beef gives you the perfect base for these nachos! However, if you want to spice things up you could easily substitute with your favorite protein.
  • Onion: Cooking a chopped onion with the beef adds so much flavor. It’s what takes these from good to great!
  • Taco Seasoning: Homemade or store bought. A basic taco seasoning will include spices like paprika, oregano, chili, onion powder, and garlic powder.
  • Beans: I personally love the addition of refried beans, however this is equally delicious with black beans. Use your favorite.
  • Chips: Grab a bag of your favorite tortilla chips. I like a more sturdy chip, like the “strips” that can hold more toppings, or a nacho cheese chip like Doritos.
  • Cheese: Get creative! Obviously you want a little cheddar, but toss in some Monterey or pepper jack!
  • Toppings: Here’s what we love: Tomatoes, jalapenos, olives, green onion and avocado.

How To Make Sheet Pan Nachos

This recipe was slightly adapted by one that was given to me from a friend. It’s quick, easy, and delicious!

  1. PREP: Preheat the oven to 400 degrees. Line a baking tray with a layer of tortilla chips and set aside for later.
  2. COOK: Add the ground beef and the chopped onion to a skillet that’s been heated over medium heat. Cook and crumble for 5-8 minutes, or until the meat has browned and the onion has softened. Turn down the heat and stir in your bean of choice.
  3. BUILD: Spoon half of the meat mixture over the top of the layer of chips. Sprinkle with half of the cheese. Top with a second layer of tortilla chips and repeat the layers of meat and cheese.
  4. BAKE: Bake until the cheese on both layers has melted, about 5-8 minutes.
  5. ENJOY: Add any additional toppings, like fresh tomatoes, jalapeno, or olives and enjoy!

Recipe Notes:

What kind of tortilla chips should I use for sheet pan nachos?

Grab a bag of your favorite tortilla chips. I like a more sturdy chip, like the “strips” that can hold more toppings, or a nacho cheese chip like Doritos.

Can I make sheet pan nachos ahead of time?

Yes- ish. You can prepare the meat mixture up tp three days in advance. When ready to use assemble the nachos as directed and heat for 8 to 10 minutes.

How should I store leftover sheet pan nachos?

Leftovers of this recipe are not recommended. However, if you have a ton and don’t want to see it go to waste, simply cover and refrigerate. When ready to enjoy heat in the microwave or oven.

Can I use a different type of meat besides ground beef or turkey?

Yep! Try shredded or grilled chicken or pork.

How can I make sheet pan nachos vegetarian?

Easy peasy! Simply leave off the meat and load it up with veggies! If we are doing a vegetarian style, I’ll sauté sliced onion and peppers that have been seasoned with taco seasoning. I cook them in hot oil until soft and put them onto the chips.

Ingredients
  

  • 1 lb ground beef
  • 1/2 onion (diced)
  • 3 cloves garlic (minced)
  • 1/3 cup water
  • 2 tablespoons taco seasoning
  • 1 (16oz) can beans (refried or black (drained))
  • 3 cups cheese (shredded )
  • chips
  • Additional toppings (see notes)

Instructions
 

  • Preheat the oven to 400 degrees. Line a baking tray with a layer of tortilla chips and set aside for later.
  • Add the ground beef and the chopped onion to a skillet that’s been heated over medium heat. Cook and crumble for 5-8 minutes, or until the meat has browned and the onion has softened. 
  • Stir in the garlic and cook one additional minute.
  • Turn down the heat and stir in your bean of choice.
  • Spoon half of the meat mixture over the top of the layer of chips. Sprinkle with half of the cheese. Top with a second layer of tortilla chips and repeat the layers of meat and cheese.
  • Bake until the cheese on both layers has melted, about 5-8 minutes.
  • Add any additional toppings, like fresh tomatoes, jalapeno, or olives and enjoy!
