Bacon… It’s been a while. Great to see you.
Oh… Well… ok… not that long. I decided I might as well use some leftover bacon (leftover bacon? Ha! Is there such a thing?) from my bacon pancakes to whip up some yummy BLT’s. Not just yummy but the BEST bacon lettuce and tomato sandwich(the best blt).
Perfect BLT’s starts before sandwich assembly. It all begins with cooking your pork slices. I prefer the oven baked method and decided it’s finally time that I share that with you! It’s not really hard… you just line a baking sheet with foil, spread out your bacon, and cook at 425 degrees for 10-15 minutes. Flip halfway through for a nice even crisp. The end result is perfectly cooked crispy bacon. Every time.
So now back to this sandwich… You’ll need the obvious bacon, lettuce, and tomato, plus a really great sandwich bread and a few additional toppings. Lightly toast your bread and stack away. Seems simple enough. And one of our all time favorite ways to pack a quick lunch on the go. I feel like it’s almost looked over. Everyone’s heard of it, everyone has tried it at least once, but is it truly ever at the top of your list?
- 4 slices sandwich bread
- salted butter
- 6 slices thick cut bacon, cooked
- 2 fresh tomatoes
- Toast your bread slices until lightly browned. Spread one side of each slice with a generous amount of butter. Pick a slice for the bottom and add a tiny bit of mayo.
- Layer the lettuce on the bottom followed by the tomato (sprinkled with salt and pepper) and the bacon. Top with your last piece of bread and enjoy!
