Who loves Zupas?! If you are a blogger in Utah chances are good you’ve eaten there once or twenty times. The very first time I ever visited was with one of my first roommates. She raved about their soups, salads, and sandwiches and finally convinced me to meet up for lunch. I got soup and a sandwich but couldn’t stop staring at her Strawberry Harvest Salad.
I’m not normally a big fan of fruit filled or sweet salads. I just don’t feel like the two belong together, but the bright contrasts of the red and green of this one really caught my eye. All of the ingredients, from the candied nuts to the salty cheese, worked beautifully and showcased some awesome spring flavors! How could I pass all of that up?
I did make just one adjustment by using feta cheese, but I feel like it adds just a touch more flavor. But the dressing… Oh-my-heavens does it taste good. I mean, how do you say no to a strawberry champagne vinaigrette?! It tastes amazing on everything. Especially a salad packed with so many delicious things. It’s possible I even just dip apples in it as a quick snack.
This salad really makes a fantastic meal. We have had it for lunch, dinner, and everything in between. I think the addition of so many great ingredients helps fill my belly and keep me satisfied a little longer. I also tend to reach for it when I have a little bit of a sweet tooth.
- 3 cups chopped mixed greens
- 1/2 cup sliced strawberries
- 1/4 cup feta cheese
- 1 gala apple, sliced
- 1/4 cup dried cranberries
- 1/2 cup candied pecans*
- strawberry champagne vinaigrette*
- Toss the mixed greens, strawberries, feta, apple, cranberries, and pecans in a large bowl. Serve with Strawberry Champagne vinaigrette.
