We’ve all been there… You walk over to the pantry… Searching for something sweet… You think;
“Oh! I’ll make some cookies! Something with chocolate!”
Because what girl DOESN’T love chocolate? But when you get to the pantry you realize something is wrong… Very wrong. There is NO flour and you are out of butter!
How did you let this happen?!?!?
This is EXACTLY what happened to me last week. I was out of butter and flour. Two of the most important ingredients when baking. How in the world did I not realize how low we were? I was definitely going to need to make a trip to Costco and stock up, but that wasn’t going to happen until the next morning and I wanted cookies now…
SO, I improvised with a little Nutella and sugar.
- 1 C. Nutella
- 1 C. Sugar
- 1 tsp. Vanilla extract
- 1 large egg
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
- Cream together the Nutella and sugar. Stir in the egg and vanilla.
- Spoon onto a cookie sheet and bake for 12 minutes or until lightly browned around the edges.

I was a little surprised that this recipe was so easy. I used homemade chocolate hazelnut spread, but I’m sure the store bought will work just as well. I thought maybe it would be missing something… or off somehow… But these little cookies satisfied my late night craving. And helped provide good behavior snacks for the following days.
This recipe is also VERY user friendly. Substitute the chocolate with peanut butter, or add in mini chocolate chips. For a quick gluten free treat.
