You would not believe it based on my website name, but we are actually savory vs sweet people. When it comes to breakfast, that is.
Eggs are our go-to. They seem to keep us fuller longer and there are so many different ways to prepare them. Our favorite lately? This breakfast sandwich.Â
The flavor punch you get with the roasted tomatoes, pesto, and soft cooked egg literally send this sandwich over the edge. It has got cheese melted all through and is amaaaaaaazingly delicious. It is almost like a breakfast grilled cheese sandwich. With veggies. Can we consider that a healthy breakfast??
Upgraded Breakfast Sandwich Ingredients
We really have been loving roasted tomatoes lately. I make my own by popping them into the oven with a little garlic and olive oil until they have a slight chard exterior.
Most of the time we enjoy them on toast, spread with butter of course, and smashed avocado. But on the particular day this sandwich was created, I had a seven year old with a special request for a morning sandwich! A quick visit to the fridge had me pulling out the Pepper Jack, spinach, and eggs!
- Eggs- We use large eggs for our sandwiches.
- Butter– Salted is our go-to.
- Cheese- I am normally a cheddar girl, but this combo calls for pepper jack.
- Vegetables, optional- I will not force you to add veggies to your sandwich, but you should at least give the tomatoes a try. If my picky 7 year old loves this sandwich, you will too!
- Bread- Whole wheat or grain bread is our favorite flavor, but we have also been known to make this with white bread.
I call this a gourmet sandwich mainly because anything with pesto has to be, am I right? Each one of these flavors was made for one another. They blend together in the most unbelievable way and give you a WOW factor. We have made it a few times, and while I like the roasted tomatoes, my little guy prefers when we substitute the sun dried variety. Either way you chose to go you will not be disappointed.
Tips for this recipe:
- Use a non-stick pan- We like this set.Â
- Room temperature butter is best- This will help it spread across your bread a little easier.Â
- When in doubt, add more cheese- We like two slices of cheese but one works too!Â
- Don’t be afraid to play around with the toppings. Smashed avocado with a sprinkle of red pepper flakes and salt and pepper has gone over well with everyone who has tried it!Â
Best Bread for a Breakfast Sandwich:
One of the biggest questions I get is “What is the BEST bread for a breakfast sandwich?” The answer might surprise you. Really, you can’t go wrong with any bread! But there are a few that stand above the rest. Here is a list of our go-to’s.
- Bagels- Especially everything bagels.
- White or Whole Wheat Bread- Not sliced too thin.
- English Muffins
- Flatbread

How to Make the Ultimate Breakfast Sandwich:
- Heat a small skillet over medium low heat.
- While that is warming spread butter on to one side of your bread slices. Layer pesto (if using), one slice of cheese, fried egg, tomatoes, spinach, and remaining slice of cheese between your two prepared bread pieces. Carefully transfer to your warmed pan.
- Heat on the stove until bread is toasted and cheese is slightly melted. Cut in half and enjoy!
*Tip- For easy roasted tomatoes try slicing the heirloom variety in half lengthwise, tossing with a little olive oil, and baking at 350 degrees for 40 minutes. Store in the refrigerator in a sealed container for up to 5 days.

- fresh spinach
