These are the best grilled chicken fajitas. The chicken is marinated for four hours and grilled to perfection. Served with soft cooked veggies and warm tortillas for the perfect dinner recipe!
Grilling season is here! Ok, for us grilling season lasts all year long, but we finally are getting 70 degree days! I have perfected my grilled chicken recipe and am so excited to share this with you just in time for Cinco De Mayo!
Chicken fajitas are basically a staple in our house. They are on our regular menu rotation and loved dearly by the entire family. Changing up the different vegetables ensures a fun and new flavor every single time. For today, I am going to share the traditional fajita recipe filled with onions and diced peppers.
Side note, the leftovers from this recipe make AMAZING Stuffed Peppers.
What You Need:
- Chicken breasts- I like to use chicken breasts for this recipe but it would be equally delicious if made with chicken thighs.
- Marinade- I listed the marinade ingredients down below. Make sure you let the chicken and marinade hang out together for at least 4 hours or up to overnight.
- Onion- Yellow onion is our personal favorite, and the one you will find in most fajita recipes.
- Peppers- The more color the better, in my opinion! We always grab one red, green, and yellow bell pepper.
- Salt and pepper
- A side dish- Try my cilantro lime rice!
Chicken Fajita Marinade:
- Oil- Vegetable oil will work well. We actually prefer avocado oil because it has no flavor which allows the other flavors to shine through.
- Garlic- Fresh minced garlic adds so much flavor.
- Limes- Fresh limes always give you a better flavor.
- Fajita seasoning- You can buy this in the store or make your own with the recipe below.
Homemade Fajita Seasoning:
No fajita seasoning? No problem! You can make your own by following this simple recipe. Bonus is that all of the ingredients are pantry staples!
- 1 teaspoon cumin
- 1/2 teaspoon each oregano, chili powder, and paprika
- 1 teaspoon salt
- Whisk all of the ingredients together and add to your marinade.
What toppings to put on fajitas:
This recipe is so incredibly delicious all on it’s own, however we also like to top ours with a few additional ingredients. Here are our favorite fajita toppings:
- Lime juice
- Sour cream
- Guacamole
- Pico de gallo
- Diced tomatoes
- Shredded cheese
- Fresh avocado
- Salsa
- Hot sauce
How to make grilled chicken fajitas with peppers and onions:
- Slice your chicken breast in half, or pound to 1/4 inch thickness.
- Stir together oil, garlic, lime zest, and fajita seasoning in a large zip top bag or seal-able container. Add the chicken and marinade 4 hours or up to 8.
- Heat your grill to medium heat.
- Remove the chicken from the marinade. Cook on the heated grill for 2 to 3 minutes on each side or until the chicken comes to an internal temperature of 165 degrees. Remove and rest, covered.
- Add the chopped vegetables to a heated skillet. Season with salt and pepper and cook for five minutes, or until soft.
- Slice chicken and serve with cooked vegetables and tortillas.
How to make chicken fajitas in the oven:
No grill? No problem! Use the directions below to cook the chicken in your oven.
- Heat the oven to 425 degrees.
- Heat a cast iron, or oven safe skillet, over medium heat.
- Add 2 tablespoons oil. Cook the chicken 2 minutes on each side.
- Transfer to the preheated oven and continue to cook for 15 to 20 minutes or until the chicken reaches the internal temperature of 165 degrees.

Grilled Chicken Fajitas Recipe
Ingredients
- 2 large chicken breasts
- 1/4 cup + 2 tablespoons oil divided
- 3 cloves garlic minced
- zest of two limes
- 3 tablespoons fajita seasoning
- 1 onion
- 2 peppers
Instructions
