It’s national RANCH day and I’ve whipped up a delicious 4 ingredient Ranch Chicken just for you!
One reason I love this recipe is because it’s so versatile. You can eat it with a side of mashed potatoes and a veggie, chop it and toss it onto a salad, or turn it into a flavor packed chicken burrito! We opted for the salad this time around because I had some tomatoes and lettuce begging to be used up and I am sooooo glad we went that route. It was delicious chopped with those greens and a light drizzle of vinaigrette!
Ready for me to dive into the very complicated process? You’re going to take two chicken breasts and slice them lengthwise. Dip each one into ranch followed by Italian seasoned bread crumbs. Add salt and pepper if desired. Toss those bad boys right into the oven and bake 20-25 minutes.
Not too difficult, huh? Something you think you could totally pull off for a last minute meal? I think so! We keep this one in the archives for those days when I’m in a rush or food rut and have no idea what to make. My six year old has proclaimed that this is HIS FAVORITE chicken ever.
If you want a nice crunchy exterior you can skip the oven and cook these stove top. We gave a skillet a quick mist of coconut oil and cooked on each side until golden and the chicken was cooked through. Either way you decide to go I’m sure this will quickly become a family favorite.
Before I let you go I feel like I should take a second and talk ranch… For this recipe I chose to go with Greek yogurt mixed with a ranch packet but you can also go with a store bought version, homemade ranch dressing, or a cilantro lime ranch! All are good options and would taste amazing!
- 4 chicken breast halves
- 16 oz greek yogurt
- 8 teaspoons ranch mix (we used hidden valley)
- 2 cups Italian seasoned bread crumbs
- Preheat your oven to 400 degrees. Line a baking tray with foil and set aside.
- Mix together your yogurt and ranch mix. Dip the chicken in your mixture followed by the breadcrumbs. Place on your tray.
- Bake 20-25 minutes or until the chicken is cooked through. Turn once halfway through fro even browning.
Substitute the greek yogurt and ranch for store bought ranch to make this meal even easier.
