Rich and creamy cheesecake, sweet swirls of strawberries, and a little crunch of graham crackers. It is the absolute perfect combination of flavors.
It even got two thumbs way up from my very picky ten year old. He considers himself a bit of an ice cream connoisseur. I always take my new recipes to him for final judgement. When I placed a bowl of this sweet concoction in front of him it was pure agony. I waited 2 whole minutes before he gave me his conclusion. For two minutes I sat in silence while he continued to take bite after bite without giving me a word.
Finally, he pushed the bowl away and turned to face me.
“It is perfect. Could you get me another scoop?”
What does no churn ice cream mean?
I have many no churn ice cream recipes on my website. No churn is simple to make and the flavors are endless. But what exactly is no churn ice cream?
A quick explanation would be that no churn is ice cream made without the need of an ice cream machine. It uses minimal ingredients and comes together quickly. the end result is a creamy dish ready to be scooped into cones or bowls.
What ingredients do you need for no churn ice cream?
In order to make a no churn version of ice cream, you need two base ingredients.
- Heavy whipping cream
- Sweetened Condensed milk
You will also need any add-in flavors. For example, this recipe calls for cream cheese and strawberry sauce. You could also add extracts, fruit, chocolate, juices, or even caramels.
How do you make no churn ice cream?
Once you have decided on a flavor, the process is rather simple.
- Pour one can of sweetened condensed milk into a large mixing bowl. Stir in any flavor add-in’s that you plan on using until fully incorporated.
- Whip your heavy cream until stiff peeks form. Gently fold into your prepared sweetened milk mixture.
- Transfer to a freezer safe container and freeze until solid.
I used whole graham crackers but this would be SO good with pieces of graham cracker crust too!

How to make no churn strawberry cheesecake ice cream:
No-Churn Strawberry Cheesecake Ice Cream
Ingredients
Strawberry Sauce:
- 1 pint strawberries diced
- 1/3 cup sugar
- 1 teaspoon pure vanilla extract
No-Churn Cheesecake Ice Cream:
- 6 oz cream cheese softened
- 1 14 oz can sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 2 cups heavy cream
- graham crackers optional
Instructions
Strawberry Sauce:
- Combine all of the ingredients for the sauce in a medium sauce pan. Simmer 15 minutes. Remove from heat and cool completely.Â
No-Churn Cheesecake Ice Cream:
- Using an electric mixer, whisk together the cream cheese and sweetened condensed milk until fully incorporated and no clumps remain. Stir in the vanilla.Â
- In a separate bowl, whisk the heavy cream until light and fluffy.Â
- Gently fold into the cream cheese mixture. Pour half into an ice cream pan.Â
- Drizzle half of the strawberry sauce onto the ice cream.
- Spread the remaining ice cream batter directly on top of the drizzled strawberry sauce. Top with more sauce. Use a pointed knife to swirl the ice cream and sauce.Â
- Freeze for 4 hours or until solid.Â
- Serve with crushed graham crackers and sliced strawberries.Â
