Any Zupas fans out there?! I’ve been craving a good salad and this recipe was inspired by one of their most popular. You really just can’t go wrong with a strawberry champagne vinaigrette. Sweet, a little tart, and oh-so elegant. Like always, I tried to keep things as simple as possible.
I started with my Blendtec, but you can really use any blender or food processor. Just make sure it’s powerful enough to get this extremely thin. You want a nice drizzle without all of the teeny tiny strawberry seeds. So, should we get started?
Grab a bag of frozen strawberries, thaw them out, and place them in your blender.
Add some lemon juice for a nice citrus flavor and to kick down the sweetness.
Sprinkle on a little sugar.
And top things off with a dash of champagne vinegar and a bit of olive oil. This really is the secret to this decedent dressing. Strawberries and champagne were meant to go together. This flavor combo always reminds me of that scene from Pretty Woman where they have them both sent up to the hotel suite. Her delightfully tacky outfit and wig crack me up and her dental floss… Poor girl was just worried about her gums!
But let’s get back to the recipe. Once all of the ingredients are combined just give the blender a good mix. Drizzle on your favorite greens and fall in love. - 16 oz frozen strawberries, thawed
- 1/4 cup plus 2 tablespoons lemon juice
- 1/4 cup sugar
- 2 tablespoons champagne vinegar
- 2 tablespoons olive oil
- Combine the strawberries, lemon juice, sugar, and vinegar in a blender and puree until smooth. Add the olive oil and pulse until combined.
